Brie is kind of a crowd pleaser, right? I’ve never once seen someone turn it down. And there are a million good ways to do it — baked, wrapped in pastry, straight on a board. But whipped is the one that’s becoming my favorite. No oven, nothing to time, and it sits out on a table for an hour without turning into a sad puddle. The food processor does the whole thing while you stand there.
You can top it with just about anything — toasted nuts, berries, jam, roasted grapes, herbs. Go wherever the season takes you. But here’s the version I keep coming back to.
Whipped Brie with Hot Honey and Chili Crisp
Serves 6–8 · 20 minutes, and most of that is just waiting
You will need:
- 16 oz brie, cold (that’s with the rind still on)
- 2 tbsp Spice Witch Hot Honey
- 2 tbsp Spice Witch Original Chili Crisp
- Scallions, sliced
- Toasted sesame seeds
- Flaky salt
- Crackers, toasted baguette, apple slices — whatever you’ve got
What you do:
- Take the rind off while the cheese is still cold. I learned this the annoying way — warm brie just smears and fights you. Lay the wedge on its side, cut the rind off in one pass, and go a little deeper than feels right. You’ll lose a bit of cheese and you’ll save five minutes. Scrape what’s stuck to the rind back in.
- Cube it up and walk away for 45 minutes. It has to hit room temperature. Cold cheese doesn’t whip, it just clumps and you’ll think you did something wrong.
- Into the food processor. Twenty seconds, scrape the sides, fifteen more, scrape again, ten more. You want it looking like soft whipped butter — smooth, pale, holds a swoosh. It’s about a minute and a half total and it’s weirdly satisfying.
- Spread it in a shallow bowl and drag the back of a spoon through it. Make ridges. That’s where the honey collects and it’s the whole reason it looks good.
- Hot honey first. Then the chili crisp — dig down for the solids at the bottom of the jar, that’s the crunch and the garlic. The oil on its own won’t get you there.
- Scallions, sesame, flaky salt. Put it out immediately.
A few things I’ve figured out
Triple cream whips silkier than double. Either one is fine, but if they’ve got both, grab the triple.
Get a wedge, not a wheel. A wheel is all rind and you’ll be trimming forever.
Making it ahead? Same day only. If you’re taking it somewhere, cube the cheese, pack the toppings separate, and whip it when you land. It’s best in the first couple hours.
Other ways to top it
Toasted pistachios or walnuts with hot honey. Blackberries or figs with a little black pepper. Roasted grapes in the fall. The base stays the same, you just change the mood.
Why this works
Brie is fat and salt and basically no acid, so honey by itself just makes it richer and sweeter and you’re done after three crackers. The chili crisp is what saves it — garlic, heat, something to actually chew. Then the honey comes back around at the end. Sweet, savory, crunchy, hot, all in one bite. I’ve watched people stand over this bowl and not move.
