What are air fryer carrot fries?

Air fryer carrot fries are carrots cut into fry-shaped sticks and cooked until tender and lightly browned, then tossed with Spice Witch Black Garlic Chili Crisp, flaky salt and fresh rosemary. A tahini and chili crisp dip goes on the side. They're a great one for fall parties, game day and the Thanksgiving appetizer table.

This recipe comes from Lee of The Rogue Brussel Sprout (@TheRogueBrusselSprout), who developed it and shot the photos for us. It's comfort food that happens to be made of carrots, and the rainbow ones look unreal on a platter.

Rosemary Black Garlic Chili Crisp Carrot Fries

Serves a crowd as a snack · about 30 minutes

You will need:

For the dip:

  • ¼ cup tahini
  • 2 tsp Spice Witch Black Garlic Chili Crisp

What you do:

  1. Cut the tops off the carrots and peel them if you like.
  2. Cut each carrot in half or thirds across so you have even pieces 3 to 4 inches long.
  3. Cut each piece lengthwise in half or quarters so the sticks end up about the same thickness.
  4. Toss the carrot sticks in a large bowl with the oil until they're lightly coated.
  5. Air fry in a basket-style air fryer at 400 degrees for 10 to 12 minutes. Toss after 5 minutes, then every few minutes after that, until the carrots are tender and lightly browned but not soft.
  6. While they cook, stir the tahini and chili crisp together for the dip.
  7. Chop the rosemary very finely.
  8. Put the hot carrots back in the mixing bowl and toss with the chili crisp and flaky salt.
  9. Pile them in a serving bowl, top with the rosemary and serve with the dip.

Why this works

The chili crisp goes on after the carrots come out, so the garlic and chili bits flavor the fries without sitting in a 400 degree basket. The tahini dip is nutty and a little creamy, which gives the black garlic something mellow to land on, and the fresh rosemary on top is what makes it smell like fall.
